A Merry, Sparkly, Spiced Christmas

Merry Christmas to all my dear readers! We just returned from a wonderful, food-filled holiday in Vietnam to a house packed with family and guests – the best kind of Christmas. To keep 4 kids satisfied, I whipped up these classic sugar cookies and naturally, added some spice for holiday pizzazz. I hope your holiday season is also filled with family, some sparkle, lots of love and, of course, spice.

RECIPE

SPICED SUGAR COOKIES
Toddlers, Kids, Adults

Adapted from http://allrecipes.com/recipe/10402/the-best-rolled-sugar-cookies/

Ingredients
1 1/2 cups butter softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon preferably freshly grated nutmeg

Method
In a large bowl, cream together the butter and sugar until smooth and clump-free. Beat in the eggs and vanilla. Stir in the flour, baking powder, salt and spices until well incorporated. Cover and chill the dough for at least 1 hour.

Preheat the oven to 400 F/ 200 C. Roll out the dough on a floured surface about 1/2 inch thick and cut into shapes of choice using a cookie cutter. Place cookies an inch apart on an ungreased cookie sheet. Bake for 6-8 minutes in the pre-heated oven. Cool completely. Sprinkle with powdered sugar and enjoy!
